The chalk soil in Sussex sits on the same geological formation as Champagne. The grapes are picked there and given 12 months on the lees with regular bâtonnage — a technique of stirring the lees back up to draw out more texture.
Golden colour with green tints. Lime, lemon, green apples, white flowers and a trace of butter and vanilla from the barrels on the nose. Fresh acidity, creamy mouthfeel, and a mineral finish.
