Pinot Gris — "the grey" in French. The name "Medieval Monk" refers to the Cistercian monks who carried the grape across Europe during the Middle Ages. The grape is a pink-grey mutation of Pinot Noir with origins in Burgundy, where the synonym Pinot Beurot points to the colour of the monk's habit (bure).
In Sussex it takes to the English climate and gives citrus, apple, freshly picked pear and white peach. A long time on the lees in tank builds a creamy texture, balanced by acidity and fruit.
