Still rosé from a cool climate

Rosé from the north is a different thing from rosé from Provence. A cooler climate gives higher acidity and less ripe fruit, and the result is tighter and more berry-driven than soft and peachy.

The colour comes from brief contact with the skins, not from blending red and white wine. How long the juice sits on the skins decides both colour and structure, and a few hours is enough.

Both rosés in the selection are dry and made from Pinot grapes, the same grapes that give rosé Champagne its colour.
