Chardonnay from Engel's parcel in Sauloch, in Dalsheim. The site sits on loess and limestone, south-east facing between 150 and 192 metres. Hand-picked grapes, spontaneous fermentation on native yeasts, ten months on the lees.

Pale yellow in the glass. The nose opens slightly reductive before releasing light fruit and a herbal edge. The palate carries saline minerality, body, and the clear acidity that keeps it fresh. Serve chilled, not ice-cold, with fish or poultry.
